In my scanning of blogs and news articles, I realized that yesterday, October 28th, was National Chocolate Day! Seems like every ordinary day is now a National Day to celebrate something fun, unusual or unique…chocolate day, taco day, golf day, do something nice day, noodle day, moldy cheese day..and these are just in October!
For all the chocolate lovers in the world, yesterday was probably just “icing on the cake” to celebrate all things chocolate. It just so happened that my daughter wanted to provide brownies to her class for a birthday treat. The smell of chocolate lingered in the kitchen as the fudge-like brownies with chocolate chips were baking. I also decided to try a new recipe I found when reading about National Chocolate Day. I love trying new recipes and enjoy cooking and baking but this recipe was “No Bake Chocolate Oat Bars”. Based on the reviews, it appeared to be a favorite choice by many. Those that enjoy chocolate will be enjoying this tasty treat. Try it and let me know if this is your favorite chocolate bar!
No Bake Chocolate Oat Bars
1 cup butter
1/2 cup packed brown sugar
1 tsp vanilla extract
3 cups quick cooking oats
1 cup semisweet chocolate chips
1/2 cup peanut butter
1. Grease 9×9 inch square pan.
2. Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat for 2-3 minutes. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.
3. Meanwhile, melt chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife.
4. Crumble the remaining oat mixture over the chocolate layer, pressing in gently. Cover and refrigerate 2-3 hours or overnight. Bring to room temperature before cutting into bars.
