Beat Winter’s Chill with Chili

The outside temperatures and precipitation finally caught up with what the calendar has stated it is…winter!  Our first snowfall of the year arrived a few days ago – only a dusting but the chilly temps proved that winter is here.  What better way to warm up than to enjoy a delicious crock of the perfect chili. I made this recipe not too long ago and the entire family loved it.  If you want to sample other chili recipes, try visiting the Fire and Ice Festival in Lititz, PA on February 13th!  Over 30,000 ounces of chili will be available to sample – all while supporting 25+ local charities.  This winter wonderland fun weekend also includes beautiful ice sculptures and live entertainment.  The town of Lititz becomes the “go-to” destination over Valentine’s weekend.

The Perfect Chili

3 lb ground chuck
2 onions, chopped
2 (28 oz) cans tomato sauce
2 (15.5 oz) cans Ranch-style beans
1 (15 oz) can black beans
2 cups beef broth
1/4 cup chili powder
3 TBSP ground cumin
1 tsp garlic salt, 1 tsp pepper
1 (8 oz) pkg shredded Cheddar cheese
1/2 cup sour cream
1/2 cup sliced green onions

Cook ground chuck and onions in a soup pot over medium heat until beef is browned and crumbly; drain and return to pot. Add tomato sauce, beans, beef broth, chili powder, cumin, garlic salt and pepper. Bring to a boil, reduce heat, and simmer 20 minutes or until thickened. Serve chili with cheese, sour cream and green onions.
