Super Bowl Nachos!

The kickoff of the the Super Bowl 50 is just days away.  Do you watch the football game for the battle on the gridiron, the best commercial, or the halftime entertainment? Whatever your reason, food and snacks are always part of game time! Looking for Super Bowl snacks, there seems to be a theme of pizza, wings, nachos and dips. My favorite place EVER to get nachos would be Signal Mountain Lodge in Grand Teton National Park in Jackson Hole, Wyoming.  When our family lived there, we looked forward to relishing the nachos while enjoying the mountain views. Since overnight delivery of those delicious and infamous nachos is not an option, nachos made in our kitchen will need to suffice. We make this recipe and attempt to replicate the ones we enjoyed in Jackson. Hearty Ground Beef Nachos
2 lb ground beef
2 (1.25 oz) envelopes taco seasoning mix
1 sweet onion, chopped
1 (15.25 oz) can whole kernel corn, drained
1 (14.5 oz) can diced tomatoes and green chiles
3 TBSP tomato paste
1/4 cup beef broth
1 (11 oz) bag tortilla chips
1 head iceberg lettuce, shredded
1 (8 oz) pkg shredded Mexican style cheese blend
1 1/2 cups sour cream

Cook ground beef in a large skillet over medium high heat 8-10 minutes or until browned and crumbled; drain well. Combine ground beef, taco seasoning mix, onion, corn, tomatoes, tomato paste and broth in a greased slow cooker. Cover and cook on LOW 6-7 hours. Divide tortilla chips evenly amoung serving plates; top each with lettuce, beef mixture, cheese and sour cream. Avocados can be sliced and served with nachos.
