Colored leaves of orange and yellows, cooler weather, sweaters…and pumpkin spice! All these remind us to celebrate this time of year and enjoy the Autumn sights, smells, sounds, and tastes of the season. My daughter’s birthday is this weekend and traditionally students take in a special treat for their school classmates. Since reading the book “Absolutely Truly” which takes place in Pumpkin Falls, New Hampshire, my daughter has been begging to make the recipe located in the back of the book. So this afternoon after school (and homework) we got out all the ingredients and enjoyed baking “Aunt True’s Mini Pumpkin Whoopie Pies”. This afternoon activity could have qualified as continuing education as we studied math (fractions), reading (following directions), and home economics (baking)! The end result was not only a great mother/daughter memory but delicious treats for her classmates. There were even extras for the family to enjoy after dinner tonight! Seems like everywhere you look there is something pumpkin spice flavored, but this Lancaster County favorite treat of whoopie pies with pumpkin spice is “everything nice”!
